Lazeez Kumbh (Delicious Mushroom)
The word 'Lazeez' in Urdu means delicious and 'Kumbh' in Hindi stands for mushroom. I wrote down this recipe from a book by the famous 'Jiggs Kalra', some years back. This is indeed a delicious dish which can be served with rice or roti. Lazeez Kumbh Source: Jiggs Kalra
- quartered 600 gms Mushroom
- 3/4 cup Ghee
- 3 - 1/2 teaspoons Garlic paste
- 1 cup Cabbage shredded
- 4 chillies Whole dried
- 2 - 1/2 teaspoons Coriander seeds
- 3 - 1/3 cups tomatoes Chopped
- 4 Green chillies slit
- 3 tablespoons Ginger chopped
- 1/3 cup coriander leaves Chopped
- 2/3 cup onion Sliced
- 40 gms capsicum Julienned
- to taste Salt
- 2 teaspoons Garam masala
Heat 5 teaspoons ghee and saute mushrooms over medium heat for 4-5 minutes. Drain. Heat 5 teaspoons ghee and saute cabbage till the liquid evaporates completely. Remove the cabbage and reserve the ghee. Pound the red chillies and coriander seeds.
Heat the reserved ghee and 1/4 cup ghee. Add garlic paste and stir over medium heat for 20 seconds. Add pounded spices and stir for 30 seconds. Add tomatoes and saute till fat separates. Add green chillies, ginger and 1/2 of the coriander leaves and stir.
Heat remaining ghee and saute onions still transparent. Add capsicum and saute for 1-1/2 to 2 minutes. Add the sauteed masala, mushrooms, salt and cabbage and stir constantly for 3-4 minutes. Sprinkle garam masala and coriander leaves. The dish is ready to serve.
