Rich Chocolate Cake

Yesterday was J's birthday. What better gift than achocolatecake, covered with chocolate ganache and decorated with chocolate roses. That is how I set out to make this cake. It came out better than I expected and J sure was elated seeing it. But the irony of the situation was that J was not at home t


  • 1 - 3/4 cups Flour
  • 2 cups Sugar
  • 3/4 cup Cocoa powder
  • 1 - 1/2 teaspoons Baking powder
  • 1 - 1/2 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Vegetable oil
  • 2 teaspoons vanilla extract
  • 3/4 cup Water Boiling (add 1 teaspoon of instant coffee powder)


  • Preheat oven to 180C.
  • Powder the sugar finely.
  • Sieve the dry ingredients together.
  • In a bowl, beat the eggs till thickened and add the milk, oil and vanilla.
  • Mix the flour mixture till well incorporated. Add the boiling water (coffee). The batter will be thin.
  • Pour into baking pan/pans (You may require two 9" pans).
  • Bake for 35- 40 minutes or till a skewer inserted in the centre comes out clean.
  • Cool on a wire rack.
  • Your delicious Rich Chocolate Cake is ready :-).
