Rich Chocolate Cake
Yesterday was J's birthday. What better gift than achocolatecake, covered with chocolate ganache and decorated with chocolate roses. That is how I set out to make this cake. It came out better than I expected and J sure was elated seeing it. But the irony of the situation was that J was not at home t
- 1 - 3/4 cups Flour
- 2 cups Sugar
- 3/4 cup Cocoa powder
- 1 - 1/2 teaspoons Baking powder
- 1 - 1/2 teaspoons Baking soda
- 1 teaspoon Salt
- 2 Eggs
- 1 cup Milk
- 1/2 cup Vegetable oil
- 2 teaspoons vanilla extract
- 3/4 cup Water Boiling (add 1 teaspoon of instant coffee powder)
Preheat oven to 180C.
Powder the sugar finely.
Sieve the dry ingredients together.
In a bowl, beat the eggs till thickened and add the milk, oil and vanilla.
Mix the flour mixture till well incorporated. Add the boiling water (coffee). The batter will be thin.
Pour into baking pan/pans (You may require two 9" pans).
Bake for 35- 40 minutes or till a skewer inserted in the centre comes out clean.
Cool on a wire rack.
