Cabbage Thoran (Stir fried cabbage with grated coconut)
I have mentioned earlier that J isn�t too particular about variety when it comes to food. In other words, give him typical Kerala food everyday and he is a happy man :-) I just love the way his face lights up when he sees the Kerala spread. A typical Kerala meal consists of brown rice, a curry dish,
- 2 cups Cabbage Finely chopped
- 1 cup coconut Grated
- 1 Green chilli big (You can adjust to suit your taste)
- 3 Shallot (You can use 1/2 onion)
- Ginger A thin slice
- to taste Salt
- a few Curry leaves
- 1/4 teaspoon Turmeric powder
- 1/4 teaspoon Mustard seeds
Blitz the shallots, ginger, chilli coarsely. Mix with the grated coconut. Keep aside.
Heat a pan. Pour oil. When hot, add the mustard seeds. When it splutters, add the curry leaves and turmeric powder and stir for a few seconds.
Add the cabbage and mix well. Sprinkle a few drops of water, cover and cook on low flame.
Stir in between to avoid sticking to the bottom of the pan.
When cabbage is cooked, add the coconut mixture and salt. Mix well. Leave for 2 minutes and switch off the heat.
Transfer to the serving plate.
