Many a time, I have excitedly looked at a recipe and got dejected the moment I read ‘Corn Syrup’. This is not an easily available ingredient in India. One can always substitute with honey, but certain recipes do not permit that. Modelling Chocolate, one of my most ambitious projects, called for corn syrup and no honey.
I was worried that if I don’t get corn syrup, I won’t be able to do the project. Well, it’s something that can’t be made at home but thanks to my research, I found a solution to it.
So all those who are disheartened about non-availability of Corn syrup needn’t worry. This substitute really works. Now no more walking up and down the aisle of the grocery store double checking for Corn syrup..
Light Corn Syrup Substitute

Ingredients
Sugar- 2 cups
Water- 3/4 cup
Cream of tartar- 1/4 teaspoon (You can use same amount of lime juice instead)
Salt- a pinch
Method
Combine all the ingredients in a saucepan and bring to a boil. Stir often. Cover the pan with lid and simmer for about 3 minutes. Take the lid off and stir and let it simmer till you get the right consistency. Switch off the heat. Cool and pour into a container. This can be stored at room temperature for upto 2 months.

hey i wanted to make fondant to cover cakes and the recipe calls for use of corn syrup. will this work there?? and do u have any recipes for fondant that u tried? does lime juice work as well as cream of tartar? have you tried with lime juice??/ (many a times i have noticed the substitutes do not work!)

I havent tried making fondant with this substitute..but have successfully made marshmallows using this and it worked really well. Lime juice definitely works well instead of cream of tartar . I have tried that too successfully… So in short I can assure you that whenever I have mentioned a substitute, its only after trying it out successfully ..Hope this helps you..
hi ruchi, u can use liquid glucose in place of corn syrup which is easily available.as the liquid glucose is very thick use only half the quantity..and mix with water.

If it hardened then I think you must have overcooked it..the issue while making sugar syrup is the heat matters..Too much heat for long could change the consistency..

yes you can
