Fried Chicken liver chilli

During my college days, I used to stay in a hostel near our college in Mangalore. Sometimes on Sundays, a sudden plan would take shape in someones head, to eat out. The next moment, we all would be out of our rooms, ready to head to ‘Hao Hao’, our favourite hangout for Chinese cuisine. I used to love their Fried Chicken Liver Chilli. This dish was so tasty that some of my friends who were not very fond of Chicken liver, ultimately ended up being the first ones to dig into this dish, when served. (more…)

Xacuti, pronounced Shakuti, is a Goan curry consisting of grated coconut, onion and spices. It is pretty much similar to the Varutharacha Curry that we make in Kerala. It was the name of this dish, which drew me into trying it. The name sounds stylish, and seems to be rhyming with that of some Italian sports bikes. :-) After preparation, I realised that this dish turned out to be as exciting as its name. I generally  refer to the Goanfoodrecipes site for my experiments on Goan cuisine. After reading its reviews, I gave a little twist to the original recipe, which I would say was worth it.

The Hara Masala Biryani recipe I am presenting here is an original creation of mine, a result of my experimentaion. I just called it Hara Masala Biryani because the masala used to prepare the Biryani is green in colour. If there is a Biryani by the same name, I am not sure whether it would taste the same. I can only say that my preparation definitely tastes yummy and my boys will vouch for it.  (more…)

I had come across the recipe of Yakhni Biryani by Chef Zakir Qureshi some time back and has been following ever since. I found the preparation of this Biryani unusual but went ahead. Now that I have got into the grind, I was highly motivated to try out something new today. A quick look at the pantry and my eyes didn’t go past the Bucatini. :-) Bucatini is a thick spaghetti-like pasta with a hole running through the centre. The name comes from Italian: buco, meaning “hole”, while bucato means “pierced” (Courtesy: Wikipedia). As I had saved the recipe of  Bucatini All’Amatriciana with Spicy Mozzarella Meatballs in my favourites folder, I didn’t have to search for the recipe. (more…)

The story goes that Galawati Kabab, an Awadhi delicacy, was developed for an aging Nawab who couldn’t chew, as he had lost his teeth. The word Galwati means ‘melt in mouth’. The first time I heard of Mutton Rezala was on Madhur Jaffrey’s show on TV. Rezala is a traditional Bangladeshi recipe for a classic meat-based curry in curd, flavoured with cardamom, cloves, garlic, ginger and chillies. Even though it has its origins in Bangladesh, it has a Mughlai influence in its taste and preparation. This dish goes well with rice, naan, roti etc.
