Squid Thoran 1

 

Once we reached ISB, our first outing was to Hypercity in Inorbit Mall to check out grocery items. I was looking around checking out stuff, when D came running and said, “Mama, they have squid here.” The excitement of seeing Squid, his favourite was written all over his face. Needless to say, after a while, we were headed home with a packet of squid in our shopping bag. Squid thoran was the first idea that popped in my mind for the next day’s lunch.  (more…)

Fish curry

I was really missing fish back in Agra and tried to make the most of my vacation by making varieties of seafood dishes. One such dish was a simple fish curry using onions and tomatoes. The first time I was introduced to this preparation was by a good friend Mrs Gordon. I was indeed surprised to see that fish could be prepared in similar way as chicken masala. Mangalore Fish

Seafood…That was one of the must have’s in our list before heading home. Back in Agra, the chances of getting fresh fish of our choice was next to none. So, the trip to Kerala was double whammy. We get to meet our near and dear ones and eat seafood to our heart’s content. Another aspect for me was the fact that I get to prepare and put up some Fish recipes for my readers. :-) The moment I decided to cook, I knew what I wanted. Mangalore Fish. Salami rosettes1

It was during one of those internet browsing sessions, that I came across Salami-Bread Roses. Though the idea did ring a bell, I was too preoccupied to give it a second look. Nevertheless, the thought stayed in my mind, and while preparing the dough for Cinnamon Rolls, it popped out. So I took out a bit of the dough and made two roses. Voila!! It was a beauty !! Hats off  to the person who came up with this amazing idea.

I finally managed to grab a copy of Jiggs Kalra’s collection of recipes named ‘Prashad, Cooking with Indian Masters’. This book contains recipes from different parts of India, that too narrated by the Chefs themselves. I would definitely recommend this book to all those interested in trying out varied Indian cuisines.

Crispy sesame beef

It was during our Dubai trip that I tasted Crispy Fried Beef, for the first time, at a Chinese restaurant, ‘Nanking’. The beef was crunchy and the taste was amazing, unlike any beef preparation I had till then. I must confess that my favourite Chinese restaurant in India is the Nanking at Secunderabad and for a moment thought it to be part of the same chain, which it was not.

Chicken Kathi Rolls 1

Coming up with something different as evening snacks, almost on a daily basis, when D comes back after his play is one of my constant worries during the day. The boy would be all tired n hungry and if I don’t put something worthwhile on the table, he might even eat me up. I am sure this dilemma is felt by many mothers around the world. Chicken Momos

Momo is a type of dumpling native to Nepal, Tibet, Bhutan, Sikkim and other Himalayan states of India. My first rendezvous with Momos was during our stay in Sikkim. It was another ‘Love at first bite’ for me. Though there are fried as well as steamed versions of Momos, my personal favourite is the steamed version. Shaping a Momo is an art in itself and it takes some experience to shape them beautifully. I just love watching those experts make Momos so deftly. Wish I were so quick !!! :-P

Cashew Chicken

Cooking was the last thing on my mind when we embarked on the Dubai trip. But when my cousins, with whom we were staying, indicated their eagerness to taste one of my creations, I decided to take time off, in the midst of our hectic trip. The biggest challenge, when cooking in somebody else’s kitchen, is figuring out where the ingredients are. Moreover, I had to make do with whatever was already there. Spotting some boneless chicken in the fridge and some cashew nuts on the shelf, my decision to make Cashew Chicken was instantaneous. So by the time my cousins returned from work, the Cashew Chicken was ready to be devoured, which sure they did. My sister-in-law gave a ‘thumbs up’ with the remark, “Chechi, this tastes just like the ones you get in a restaurant.” Phew…another jackpot.. :-) (more…)

Fried Chicken liver chilli

During my college days, I used to stay in a hostel near our college in Mangalore. Sometimes on Sundays, a sudden plan would take shape in someones head, to eat out. The next moment, we all would be out of our rooms, ready to head to ‘Hao Hao’, our favourite hangout for Chinese cuisine. I used to love their Fried Chicken Liver Chilli. This dish was so tasty that some of my friends who were not very fond of Chicken liver, ultimately ended up being the first ones to dig into this dish, when served. (more…)

Chicken Curry

Usually while making run of the mill dishes at home, I don’t follow any particular recipe as such. I just add the ingredients according to what comes to my mind at that moment. By the end of the day I would have completely forgotten how I made the dish. The trouble starts when a few days later, the boys’ request goes like this “Can you make that dish which you prepared on that day??” and I go completely blank. But now, thanks to my blog, I note down each and every step and hence don’t have to give that blank look again. :-) (more…)

Hunan Chicken

The other day, while I was searching for a chicken recipe to go with the Szechuan Fried Rice, I stumbled upon the recipe of Hunan Chicken. The picture was so visually appealing that I didn’t have any second thoughts. I just decided to go ahead and nail it. Though the recipe called for boneless chicken, my eagerness took the  better part of me; to proceed ahead without wasting any time in de-boning the chicken. I tweaked the recipe a bit to suit our liking of having lots of gravy, to have with rice.
